Mosquito March


I'm speaking for everybody in Laie when I say: LEAVE US ALONE PESKY MOSQUITOES!

I woke up the other day with five bites on my face. FIVE.
I need some muhi cream (itch relief) pronto!

Anyway, despite all of the angry mosquitoes sucking the blood out of my face, this month has been quite extraordinary. I've been documenting many of the meals we've eaten this month, our friends, and the lovely sites here on this beautiful island.

So bare with me as I post a billion photos on this post... :)

 This was supposed to be a hamburger dinner, but it turned out to be more like a sandwich dinner. It was still dang good though. David can attest to its deliciousness!

I also made some homemade mac n' cheese. I didn't use the mac part...so I guess I should call it pen n' cheese? 
It doesn't matter what you call it as long as it's goooooood :)
David and I traveled with our friends to another part of the island...I actually don't know where, but it was awesome! While our friends went rock climbing, David and I chilled on the beach.

 Thank you Mama n' Papa Stephan for makin this super hot hub for me. 
People like to ask me one specific question when David and I are walking together around school:
"do YOU like his mustache??"
I simply reply, "LOVE it."

This just in...

My 15 minute nap turned into a 1.5 hour deep sleep. I woke up thinking it was tomorrow.
I was going to blame it on being a "busy" college student, but I'm pretty sure I would do this even if I was out of college.
What can I say, I love to sleep.


 that's me.
apparently I still look like this when I sleep.
at least it's kinda cute right?



But sometimes I don't get enough of it at night, so gotta pay off that sleep debt sometime during the day right??
I guess now my brain batteries are fully charged to study for the two tests I must take tomorrow!
...yuck...
Let the studying begin!

Chicken Squared

Chicken katsu is (I'm guessing) David's favorite food. 
Guessing, because he says he doesn't have a favorite/everything is his favorite. Haha.

Every time I mention chicken katsu for dinner, his eyes brighten, and a big smile is plastered on his face. 

This chicken katsu is a little different though--
I added onions and eggs on top.
hence. chicken squared.

In Japan it's called, "oyako-don", because "oyako" literally means parents and child. 
get it now?
 :)

Ingredients for Chicken Katsu:
-Chicken
-Egg
-Flour
-Panko
-Salt and Peppa

Unfortunately, I did not measure anything, so this is an incomplete recipe, but you can look up some other recipe for chicken katsu.
 It's super easy!


I'm drooling at this cooking stage.
HURRY AND COOK STUPID CHICKEN!


When the chicken is nearly done cooking, chop up your onions and throw them in the pan with mentsuyu sauce (can be found at your local asian market)
 

After the onions turn clear, add your cut-up chicken katsu into the pan.
Pour the egg mix around and on top of the katsu.
(the little white specks you see in there, uhhh it's minced garlic, which you normally don't put in chicken katsu...but twas scrumptious)

 I wish I had prettier bowls to display my food in...
but for now, till I graduate college, this is good!

friday fiestas.

The other day we went to Foodland and bought avocados
We never buy avocados because they're usually a killer rip-off over in the land of food, but we decided it was alright since we felt festive that day.

We made steak fajitas with homemade tortillas, salsa, guac, and mexican rice. 
ALL homemade (good job us)!
Oh my gosh. 
It was DELICIOUS
And we have leftovers and have been enjoying them for two days now :)

 I want some more of this right now!!!

 I'm going to have to ask my sister-in-law, Kari, how to make some real kine mexi rice, because I heard she's the master chef of Mexican food :)
